Ingredient List
- 2 cups long grain rice (rinsed)
 - 1 3/4 cups water
 - 1 cup vegetable broth
 - 5 tbsp lime juice divided
 - 2 tbsp avocado oil
 - 1/2 cup cilantro, chopped
 - Zest of one lime
 - 1/2 cup water
 - 3/4 cup apple cider vinegar
 - 1 tbsp honey
 - 1 tsp salt
 - 1 red onion thinly sliced
 - 1 pack (4 links) Seemore Chicken Chili Verde sausages
 - Avocado sliced
 - Fresh lime wedges
 - 2 tbsp avocado oil
 
Directions
First make quick pickled onions:
Bring water, apple cider vinegar, honey, and salt to a simmer. Add sliced onion to a jar and pour vinegar mixture over the top. Cover with a lid and let sit for at least 30 minutes.
Then start your rice:
Add rice, water, vegetable broth, 3 tbsp lime juice, avocado oil to an instant pot (or cook on stovetop according to directions. Set Instant Pot to “rice” setting — (will cook for 12 minutes) and then natural pressure release for 5 minutes.
Meanwhile:
Chop 1/2 cup cilantro and set aside. Cut up 1 package of Seemore Chicken Chili Verde Sausages. Add avocado oil to a pan and brown sausage over medium heat.
When rice is done, release the rest of the pressure, fluff rice with a fork, and add in the remaining 2 tbsp lime juice, lime zest, salt, and chopped cilantro. Stir and fluff with a fork again.
Lastly, build your bowl! Cilantro lime rice, browned sausage, avocado, pickled onion, more fresh cilantro, and squeeze of fresh lime. Enjoy!
