Loaded Baked Potato Breakfast Sandwich

Ingredient List

  • 2 tablespoon neutral oil, divided
  • 1 loaded baked potato sausage, split longways down the middle
  • 1 large egg
  • 1 slice American cheese
  • 1 hamburger bun (try Martin's Potato Roll or King's Hawaiian)
  • Hot sauce for serving
  • Salt and pepper


Add 1 tablespoon of oil to a cast iron skillet and heat over medium-high heat until shimmering. 

Place sausage in skillet, split side down and cook until browned and sizzling—about 2 minutes. Flip and cook until outside is browned—about 2 minutes more. Remove from pan and set on a paper towel to drain.

With heat still on, add remaining tablespoon oil to skillet and heat until shimmering hot.

Gently crack egg into skillet, season with salt and pepper and cook, swirling the pan occasionally to redistribute the oil and prevent sticking, until egg is crisp and lacy around the edges and yolk is runny—about 2 minutes.

When egg is to your liking, add American cheese slice on top and place cover on skillet for about 30 seconds to melt cheese. 

Split bun and lay sausage on the bottom roll. Place egg and cheese on top of sausage and place the top bun on top.

Serve with hot sauce.
