- 1 large red onion, very thinly sliced
- 1/2 cup distilled white vinegar
- 2 tablespoons sugar
- 1 tablespoon kosher salt
- 1/2 cup ice cubes
Add sliced onions to a heat-proof jar with a lid.
In a medium saucepan, bring vinegar, sugar and salt to a simmer, whisking until salt and sugar are dissolved. Remove from heat and stir in the ice cubes.
Pour mixture over the sliced onions in the jar. Cover and refrigerate at least one hour and up to two weeks. Save brine for vinaigrettes!
