Ingredient List

  • 1 lb grated cheddar cheese
  • 1 lb grated monterey jack cheese
  • 2 tablespoons all-purpose flour
  • 2 Seemore Broccoli Melt sausages, casing removed, crumbled
  • 1 cup minced onion
  • 1 cup lager
  • 1-1⁄2 cups pico de gallo or salsa
  • Chips for dipping

Directions

In a large bowl, toss cheddar and jack cheese together with flour and set aside. Heat a 9” cast iron skillet over medium heat and add broccoli melt sausages, using the back of a spoon to crush them into small crumbles, and cook until they begin to render — about 1 minute. Add onions and cook until the sausage is browned and the onions have softened and become translucent — about 4-5 minutes. 

Remove sausage and onion mixture from the skillet and set aside. Return skillet to heat and deglaze with lager, scraping up any browned bits that have formed on the bottom of the pan. Simmer for 1 minute. Whisking constantly, add cheese mixture a handful at a time, making sure the mixture is smooth and uniform between each addition. 

Add sausage and onion mixture, reserving about 1⁄4 cup of it for garnish, and stir until fully incorporated into cheese. 

Remove from heat, top with salsa and reserved sausage crumbles and serve with chips for dippin’. Serve hot.
